Beet and Carrot Salad
Beets, 2 medium-sized
Carrots, 2 medium-sized
1/2 clove garlic, minced or crushed with salt
Olive oil, 1/4 cup plus 2 tbsp
Lemon juice, 1/4 cup
Parsley, 1/2 bunch
Hemp hearts (type O, A, B), sunflower seeds (type A, B, AB) or sesame seeds (type O, A), 1 tbsp
Bragg’s liquid amino, one squirt (omit if type B, and use additional salt if desired)
Grey sea salt, large pinch
In a food processor, finely grate raw beets and carrots, combine with minced parsley and seeds. In a separate bowl combine olive oil, lemon juice, Bragg’s seasoning and a pinch of salt. Shake dressing well and pour over beet and carrot mixture. Let stand for 15 minutes. Excellent for detoxing.
