Congee
A warming, easy to digest breakfast from the East – perfect for breaking a fast.
Easy to make, too.
Detox-friendly and gluten-free
½ cup ……………… Short grain brown rice
3 cups ……………….Water
Handful …………….Choice of vegetables: e.g. sliced onions, carrots, celery, seaweed
To taste ……………..Unrefined salt (start with ¼ tsp), black pepper (pinch), fresh ginger
(1/4 tsp)
Put all ingredients in a crock pot, turned on low or start on high if your pot is slow to heat up or has a very low temperature, then turn down before you go to bed. Let sit for 6-8 hours, overnight, ready in the morning.
