Roasted Yams with Rosemary

Roasted Yams with Rosemary

5 to 6 medium yams, quarrtered
1/4 cup extra virgin oilive oil
1Tbsp fresh rosemary (or 2 tsp dried)
Dash cayenne or grated fresh ginger
One medium yellow onion, coursely chunked
2 cloves garlic, sliced

Mix all ingredient together and place in a baking dish.  Bake in the oven at 350 – 375 for 1 hour.  Check on the yams at 20 minute intervals and turn as necessary.
Can serve with other roasted vegetables and/or green salad.
