Sprouted Lentil Salad
Grey or green lentils ………………………………………1 cup
Red onion, finely diced……………………………………1 – 2 tbsp
Grapefruit pieces, cut (optional)……………………….1/2
Dressing
Olive oil ……………………………………………………….1/4 cup
Lemon juice or apple cider vinegar…………………….3 tbsp
Dry mustard powder ……………………………………….1/2 tsp
Grey sea salt …………………………………………………..1/4 tsp
Maple syrup …………………………………………………..1 tbsp
Soak lentils for 16 hours in clean water, drain and rinse. Combine all ingredients, including dressing, let sit for 2 hours before eating. Keeps well in the fridge for 2 days.
